Instructions

Thaw the beef short ribs in the refrigerator overnight, then wash them twice to remove any bone fragments.

Boil 1.8 liters of water with 1/2 cup of sugar, add the short ribs, and boil without covering the lid.

Rinse the pre-boiled short ribs in cold water to remove any gamey odor.

Blend the onion and pear in a blender with 160mL of water to make a juice.

Add 1 cup of dark soy sauce, 1/2 cup of mirin, 1/2 cup of brown sugar, 1 tbsp of minced garlic, 1/2 tbsp of minced ginger, and the juice from the blender to the ribs and stir.

Add 1 liter of water, 2 dried red chilies, and 1 licorice root, then simmer over medium heat for 40 minutes.

Prepare the large green onion, red chili, shishito peppers, carrot, fresh shiitake mushrooms, chestnuts, and jujubes.

After 40 minutes, add the large green onion, shishito peppers, and red chili, and simmer over low heat for another 10 minutes.

Add 1 tbsp of sesame oil, 2 pinches of black pepper, and 1 tbsp of sesame seeds, then mix well to finish.
