Pork Kimchi Stew

This is a simple and high-success-rate method for making Kimchi Stew. Boil it thoroughly and enjoy it as a hearty meal.

What You'll Need

Pork (pork shoulder)1 cup (130g)
Aged kimchi3 cups (390g)
Water3 cups (540ml)
Cheongyang chili pepper2 (20g)
Large green onionapprox. 2/3 stalk (70g)
Minced garlic1 tbsp (20g)
Coarse red chili powder1 tbsp (8g)
Fine red chili powder½ tbsp (3g)
Soup soy sauce1 tbsp (10g)
Salted shrimp1 tbsp (20g)

Instructions

Cut the pork into bite-sized pieces about 1.5cm thick and place them in a pot.

Add the pork, water, and salted shrimp to the pot and bring to a boil over high heat.

Once the stew starts boiling, reduce to medium-low heat and boil for at least 10 minutes until the meat is tender.

Slice the green onion into 0.5cm thick rounds and slice the Cheongyang chili peppers diagonally into 0.5cm thick pieces.

After 10 minutes, if the water has reduced, add an equal amount of water, then add the aged kimchi, soup soy sauce, coarse red chili powder, and minced garlic.

Finally, add the green onion and Cheongyang chili peppers and bring to a boil.
