Stir-fried Water Spinach

What You'll Need

Water spinach200g
Water3 tbsp (30g)
Whole garlic5 cloves (25g)
Cooking oil3 tbsp (21g)
Oyster sauceapprox. 1 1/2 tbsp (20g)
Soy sauceapprox. 1/2 tbsp (6g)
Brown sugarapprox. 1/6 tbsp (2g)
Vietnamese chili3 pieces

Instructions

First, wipe the dust off the Vietnamese chilies with a dry cloth or paper towel, then cut them into 2-3 pieces.

Remove the stems from the whole garlic, crush them with the side of a knife, and mince coarsely.

Trim the ends of the water spinach, then cut the stems into 5-6cm lengths and the leaves into 7-8cm lengths.

Drizzle plenty of cooking oil in a frying pan, heat it well, and add the minced garlic and chilies at the same time.

Add the stems of the water spinach first, then add the leaves, followed by the prepared sauce, and stir-fry quickly.

Stir-fry quickly so that all ingredients are well mixed and the water spinach does not wilt, then plate.
