What You'll Need

Instructions

Prepare the pasta water by adding 1 chicken stock cube and a pinch of salt to 2L of boiling water.

Once the water is boiling, add the spaghetti noodles and cook for 7 minutes.

Finely chop 1/2 an onion and the Italian parsley.

Drizzle olive oil in a pan and cook the onion until it turns golden brown.

Add the chopped bacon to the pan and stir-fry to render the fat.

Pour in a generous amount of white wine over high heat to add flavor.

Add half a cup of pasta water to the pan and boil to reduce the sauce.

When the sauce has reduced by half, add 250ml of heavy cream and mix.

Add the cooked spaghetti noodles to the pan and mix well with the sauce to finish cooking.

Add the Parmigiano Reggiano cheese and mix well until creamy.

Finally, add 1 egg yolk and sprinkle with black pepper to serve.
