Chinese-style Japchae is a simple and delicious dish made by stir-frying various vegetables, pork, and glass noodles. Using soaked glass noodles can shorten the cooking time.

Slice the pork into strips.
Slice the green onion, cabbage, onion, carrot, bell pepper, and shiitake mushrooms.
Add 3 tbsp of cooking oil to a frying pan and heat over high heat.
In the heated pan, stir-fry the sliced green onion, 1 tbsp of minced garlic, 1 tbsp of soy sauce, and the pork.
Once the meat is cooked, add the sliced vegetables (excluding mushrooms) and 2 tbsp of oyster sauce, and stir-fry until the vegetables wilt.
When the vegetables have wilted, add the soaked glass noodles, a pinch of black pepper, and 1/2 tbsp of sugar, then mix and stir-fry well.
Finally, add the soaked wood ear mushrooms and stir-fry everything together.
