Spicy Egg Soup

A simple recipe for spicy egg soup packed with glass noodles. You can easily make a warm and spicy soup dish at home.

What You'll Need

Glass noodles60g
Green onion2 stalks (approx. 150g)
Onion¼ (approx. 50g)
Water1 liter
Tuna sauce3 tbsp
Soup soy sauce1 tbsp
Minced garlic1 tbsp
Salt½ tsp
Coarse red chili powder1 tbsp
Fine red chili powder1 tbsp
Cooking oil2 tbsp
Sesame oil1 tbsp
Pepperas needed

Instructions

Soak the glass noodles in warm water for about 15 minutes.

Roughly chop the green onion and onion.

Lightly beat the eggs, being careful not to create foam.

Pour cooking oil and sesame oil into a pot, add the green onion and onion, mix well, turn on the heat, and stir-fry over medium-low heat until fragrant.

Once the green onion and onion are soft and fragrant, turn the heat to low and add the minced garlic to stir-fry.

Add the coarse and fine red chili powder to the stir-fried ingredients, mix well, then add water and bring to a boil.

Once it boils, add the tuna sauce and soup soy sauce and continue to boil.

Add the soaked glass noodles to the boiling soup and cook for about 2 minutes.

Slowly add the prepared eggs little by little so they don't clump together.

Let it sit for about 5 seconds until the eggs coagulate and float, then turn off the heat and gently stir.

Add a dash of pepper before serving to bring out the spicy flavor of the soup.
