This is an Italian-style homemade carpaccio using octopus. It is a dish where tender, chewy octopus pairs perfectly with a refreshing dressing.

Instructions

Remove the leaves and eyes from the back of the cleaned octopus, and thoroughly remove the internal organs from the head.

Hold the octopus by the head and dip it into boiling water so the legs are submerged, then pull it out; repeat this 7 times.

Add the octopus to the water, and once it starts boiling, reduce to medium heat, cover, and boil for about 40 to 50 minutes.

Cut the middle of the prepared plastic bottle to use as a mold for the carpaccio.

Cut the boiled octopus, place it into the bottle so it fits snugly, press down with a cup to remove air, then cut the top part to close it.

Wrap tightly with plastic wrap and refrigerate for at least 6 hours to allow the gelatin to set.

Take out the set gelatin and carefully slice it with a knife to create nice circular shapes.

Prepare the dressing, place the octopus on a plate, and drizzle the dressing over the finished octopus carpaccio.
