Hong-karebushi (dried bonito)400g

Instructions

Mix Hong-karebushi and Sodabushi in a 2:1 ratio, add kombu, and extract the broth in boiling water.

Remove impurities from the broth and simmer over low heat for 40 minutes.

Prepare the soy sauce base by mixing soy sauce, mirin, and sugar in the specified ratio and aging it for one month.

Mix the aged soy sauce with the broth and raise the temperature to 60-70 degrees to complete the soba base.

Boil the soba noodles in boiling water, then rinse in ice water.

Serve the soba garnished with green onions, grated radish, cucumber, and shredded seaweed.
