What You'll Need

Whole chicken1 (size 12)
Kalopanax tree branch1 bundle
Green onion1 stalk
Gingerthumb-sized
Garlic1 handful
Salt1 tbsp
Buckwheat flourappropriate amount

Dark soy sauce3 tbsp
Vinegar2 tbsp
Yellow mustard1 tsp

Instructions

Cut off the tail and wing tips of the chicken with scissors, then split the belly about 80% open.

Wipe the inside of the chicken clean with a paper towel, coat it evenly with buckwheat flour, and let it age in the refrigerator for 1 hour.

Rinse the chicken in running water, then place it in a pot with the Kalopanax branch, green onion, ginger, garlic, salt, and water to boil.

Cover and cook the chicken over high heat for 20 minutes.

To make the sauce, finely chop the green onion, mix hot water into the red pepper powder, then add the rest of the sauce ingredients and mix well.

Transfer the cooked chicken to a steamer, cover, and steam for about 5 minutes.
