Mix 1 cup of potato starch, 1/3 cup of water, 1/2 tbsp of egg, and 1/3 cup of cooking oil to make the batter.
Add cooking oil to a frying pan and heat over medium heat to at least 130 degrees.
Finely mince 3 cloves of garlic, 1 stalk of green onion, and 1/3 of an onion.
When the oil reaches the proper temperature, coat the shrimp in batter and fry once, then fry again after 1-2 minutes; remove when bubbles decrease and place on a wire rack.
In a new pan, add 3 tbsp of chili oil, minced green onion, garlic, onion, and 4 tbsp of ketchup to stir-fry and release the aroma.
Add 1 cup of water, 3 tbsp of sugar, 1 tbsp of oyster sauce, 0.5 tbsp of doubanjiang, and 2 tbsp of vinegar, and mix well to make the sauce.
