Instructions

Cut the chicken legs with scissors and place them in a pot.

Add the pork belly block for chashu, chicken, and pork fat to the pot, add water, and boil.

Mince the garlic and measure it.

Grate the ginger using a cheese grater.

Add butter to a pan, then add the minced garlic and minced ginger and sauté.

Add soy sauce, mirin, MSG, oyster sauce, red miso (Awase), and white miso (Koshikoji) and mix.

Add sesame oil, black pepper, and sansho pepper, and mix to complete the miso paste.

Mix sugar, dark soy sauce, mirin, and cooking sake to make the chashu seasoning liquid.

Strain the broth used to boil the pork belly.

Add the pork belly for chashu into the chashu seasoning liquid and boil.

Add cooking oil and sauté the bean sprouts and chives.

Mix the broth, miso seasoning paste, seabura, and sesame powder to make the ramen soup.
