Pat the pork belly dry with paper towels to remove any blood.

Make some shallow cuts into the pork belly.

Preheat a thick-bottomed pot with a lid over medium heat.

Place the pork belly into the heated pot, starting with the skin side down.

Cover the pot with the lid, reduce the heat to low, and cook for 5 minutes.

Flip the meat over to ensure it browns evenly.

Cook for another 10 minutes, turning as needed so that all sides become golden brown.

Add the whole garlic and cook for 10 minutes, letting it fry in the rendered fat until about one-third submerged.

Turn off the heat, remove the meat to a plate, cover it with a rice bowl or similar, and let it rest for 5 minutes.
