Prepare the broth by soaking the kelp and shiitake mushrooms in water for at least 3 hours.

Finely mince the garlic to prepare for making the shio tare.

Cut the onion into appropriate sizes.

Grease a pan and fry the garlic and onion slowly over medium heat.

Boil the eggs in boiling water for 6 minutes and 10 seconds, then remove and place in cold water.

Sear the pork belly on three sides until golden brown, leaving the bottom side as is.

Place the pork belly in a sauce mixed with soy sauce, water, and sugar, and simmer thoroughly for at least 30 minutes.

Place the chicken and pork back bones in a pot and boil the broth while skimming off the blood without adding anything else.

Thinly slice the green onion to prepare the chashu garnish.
