Insert your thumb into the head of the cleaned octopus to turn it inside out, remove the innards, and use scissors to cut out the eyes and mouth.
Cut the cleaned octopus heads in half and cut the legs into two-joint pieces for easy eating.
Place the cleaned octopus in a pot to lightly steam it to remove excess moisture, rather than boiling it in water.
Add 2 tbsp of soju to the pot with the octopus, cover with a lid, turn on the heat, and steam over high heat for 1 minute and 30 seconds.
