Mapo Tofu

What You'll Need

Tofu1 block
Porkappropriate amount

Garlichalf or 1/3 piece
Red chili1 piece

Doubanjiang (spicy bean paste)1 tbsp

Instructions

Cut the tofu into 1.5cm cubes and prepare.

Finely mince the green onion and julienne some.

Crush the garlic and mince it finely.

Split the red chili, remove the seeds, and mince finely.

Pour water into a pot, add the cubed tofu, blanch slightly, and drain in a sieve.

Make chili oil by adding cooking oil and chili powder in a 5:1 ratio in a pan and heating over low heat.

Strain the finished chili oil using a sieve and paper towel to separate only the oil.

Add the homemade chili oil to a pan and stir-fry the minced green onion, garlic, and ginger to release the aroma.

Add the minced pork and stir-fry, breaking it up so it does not clump.

When the pork turns white, add sugar, soy sauce, Doubanjiang, and chili oil, and mix the sauce.

Pour water into the pan and boil, then add the blanched tofu and sesame oil.

Gradually add the starch water while stirring with one hand to achieve the proper consistency.

Finally, add the minced red chili, mix evenly, and serve on a plate.
