Mapo Tofu

A spicy and hearty Mapo Tofu recipe made quickly with one block of tofu and ground pork.

What You'll Need

Tofu900g (1 large block)
Ground pork1 paper cup
Onion1/4 small
Green onionAs needed
Garlic5 cloves (2 tbsp minced)
Ginger1 large clove equivalent
Red chili1
Cooking oil2 tbsp
Rice wineA little
Doubanjiang2 tbsp
Gochujang1/2 tbsp
Red chili powder2 tbsp
Black pepperGenerous amount
Raw cane sugarA pinch
Water400ml
Potato starch2 tbsp
Sesame oilA little

Instructions

Cut the 900g large tofu block into small cubes.

Coarsely mince 5 garlic cloves to make about 2 heaping tbsp.

Mince the ginger to an amount equivalent to 1 large garlic clove.

Slice the green onion thinly.

Slice the red chili thinly.

Finely chop 1/4 of a small onion.

Boil water in a pot and blanch the tofu to make it soft.

Heat the pan, add 2 tbsp of cooking oil, and stir-fry the chopped onion first.

Once the onion fragrance is released, add the minced garlic, ginger, green onion, and red chili to infuse flavor.

Add about one paper cup of ground pork and stir-fry.

Add a little rice wine and stir-fry until the meat is fully cooked.

Add 2 tbsp of Doubanjiang and 1/2 tbsp of Gochujang, then stir-fry well again.

Once it boils, add about 400ml of water and let it simmer.

Add a pinch of raw cane sugar instead of sugar.

Add the blanched tofu.

Add 2 tbsp of red chili powder to make it look appetizingly red.

Mix 2 tbsp of potato starch with water to make a slurry.

Add the starch slurry in two or three batches while stirring to thicken.

Finally, drizzle with a little sesame oil to finish the Mapo Tofu.
