Braised Radish

A spicy and delicious braised radish recipe that adds umami with shiitake mushroom powder and savory flavor with perilla oil.

What You'll Need

Radish1 piece (1kg)
Water500mL
Green onion1 stalk
Cheongyang chili pepper1
Medium dried anchoviesA handful (30g)
Red chili powder3 tbsp
Shiitake mushroom powder1 tbsp
Soup soy sauce2 tbsp
Dark soy sauce4 tbsp
Sugar1 tbsp
Minced garlic1 tbsp
Mirin3 tbsp
Perilla oil1 tbsp
Toasted sesame seeds1/2 tbsp

Instructions

Cut the radish into 1cm thick rounds.

Slice the green onion in half and cut, and slice the Cheongyang chili pepper in half as well.

In a bowl, mix 500mL of water, 1/4 cup of dark soy sauce, 2 tbsp of soup soy sauce, 1 tbsp of minced garlic, 1 tbsp of sugar, 3 tbsp of red chili powder, 3 tbsp of mirin, and 1 tbsp of shiitake mushroom powder to make the sauce.

Place the sliced radish in a pot, pour in the sauce, add the medium anchovies (which have been microwaved for 1 minute) in between, and cover with a lid.

Boil over high heat for 5 minutes.

Open the lid, flip the radish, add the green onion and Cheongyang chili pepper, cover with the lid, lower to medium heat, and braise for 15 minutes.

Open the lid, drizzle in 1 tbsp of perilla oil, reduce to low heat, and braise for another 10 minutes to finish.
