What You'll Need

Dry quinoa1 cup
Water1/4 cup
Cashews1 cup
Lemon juice1/4 cup
Salt1/4 tsp
Black pepper1/4 tsp
Red bell pepper1/2 cup
Green onion1/2 cup
Bacon1/4 cup
Mushrooms1/2 cup

Instructions

Preheat the oven to 425 degrees.

Place cashews, water, lemon juice, salt, and black pepper in a blender and blend until creamy to make cashew cheese.

Place dry quinoa and water in a blender and blend until completely smooth to make the crust dough.

Line a baking sheet with parchment paper, pour the blended quinoa dough, and spread it thinly to the desired thickness and shape.

Place in the preheated oven and bake the crust for 15 minutes.

Remove the baked crust from the oven and flip it over so that one side becomes crispy.

Spread the prepared cashew cheese on the browned side (bottom) of the crust, and evenly top with red bell pepper, green onion, bacon, and mushrooms.

Place the topped pizza back into the oven and bake for 15 minutes.
