Mapo Tofu

What You'll Need

Tofu1/2 block
Minced meat300g
Pine mushroom1
Onion1/2
Green onion1
Minced garlic1 tbsp
Red pepper powder1 tbsp
Ginger wine2 tbsp
Soy sauce1 tbsp
Oyster sauce2 tbsp
Doubanjiang2 tbsp
Water300mL
Potato starch1 tbsp
Sugar1 tbsp
Peppera little

Instructions

Thinly slice or finely chop half an onion, preparing it as thinly as possible.

Finely chop one green onion, making it as thin as possible.

Slice one pine mushroom into bite-sized pieces.

Cut half a block of tofu into cubes the size of stew tofu.

Heat a pan and add enough oil.

Add the sliced onion and 1 tablespoon of minced garlic to the pan and stir-fry until golden brown.

Reduce the heat slightly and add 1 tablespoon of red pepper powder to stir-fry and create chili oil.

Add 300g of minced meat to the pan and stir-fry until golden and crispy.

Add 2 tablespoons of ginger wine to the pan to remove the pork odor and stir-fry thoroughly.

Drizzle 1 tablespoon of soy sauce around the edge of the pan, letting it sizzle and burn slightly while stir-frying.

Add 2 tablespoons of oyster sauce to the pan.

Add 2 tablespoons of Doubanjiang (heaping) and stir-fry.

Pour 250mL of water into the pan.

Add the prepared tofu to the pan and simmer while stirring gently so the tofu does not break.

Mix 1 tablespoon of potato starch with 50mL of water and drizzle it around the edges to adjust the consistency.

Add 1 tablespoon of sugar to adjust the taste.

Sprinkle with a little pepper and turn off the heat to finish the Mapo Tofu.
