Wok-Hei Egg Fried Rice

A recipe for egg fried rice full of wok-hei (smoky flavor) that you can taste at Chinese street food stalls.

What You'll Need

Rice1 bowl (200g)
Green onion1/2 cup (40g)
Egg2 (120g)
Cooking oil4 tbsp (40g)
Jin-ganjang (dark soy sauce)1/2 tbsp (5g)
MSG1/4 tbsp (2g)
Salt1g

Instructions

Slice the green onion thinly.

Add cooking oil and green onion to a frying pan to make scallion oil, and when it turns golden, push it to one side.

Add the eggs to the other side and scramble.

Add the soy sauce to the empty side to let it sizzle and caramelize, then mix with the scrambled eggs and sautéed green onion.

When the eggs and green onion are evenly mixed, add the salt and rice, turn off the heat, and mix using a ladle.

Once the rice is evenly mixed, turn the heat to high and stir-fry.

Add MSG to taste, stir-fry, and finish.
