Simple and delicious kimchi fried rice for singles using leftover rice and aged kimchi.

Place the aged kimchi in a stainless steel cup or a regular cup and use scissors to cut it into bite-sized pieces.
Pour one or two tablespoons of cooking oil into a frying pan and preheat it.
Once the oil is hot, crack an egg to fry it, add a little water to steam it, and remove it once it becomes crispy.
Add the chopped kimchi to the remaining oil and stir-fry.
Add half a tablespoon of sugar and continue to stir-fry to balance the sourness of the kimchi.
Pour 1 tablespoon of soy sauce around the edge of the pan to add a smoky flavor while stir-frying.
Add the prepared rice and stir-fry evenly with the kimchi over slightly higher heat until the rice is warm and well-coated.
Drizzle with about half a tablespoon of sesame oil, mix well, and finish.
Place the finished kimchi fried rice on a plate and top with the fried egg and seaweed flakes.
