Soak the shredded wood ear mushrooms in water for about 4 hours.

Blanch the bean sprouts in water for about 5 seconds, cool in cold water, and drain.

Thinly slice the green onion into strips or rounds.

Marinate the chashu and eggs in a soy sauce mixture; refrigerate for 4 days for the chashu and 2 days for the eggs to age.

Use a torch to sear both sides of the chashu to enhance the flavor of the fat.

Cut the eggs in half to prepare soft-boiled eggs.

Boil the noodles in hot water for 40 to 50 seconds.

In a bowl, combine 30g of Tonkotsu ramen soup base and 360ml of hot water to complete the broth.
