Place the beef on paper towels, roll it up, and squeeze firmly to remove the blood.
Thinly slice the onion.
Clean the shiitake mushrooms by gently wiping them with a dry cloth instead of soaking them in water, then slice them thinly.
Slice the carrot thinly and then julienne it.
Split the green onion in half and cut it into long strips.
Separate the beef slices one by one after removing the blood.
Pour the pear juice into a bowl.
Add the sugar and mix well.
Add the soy sauce, starch syrup, minced garlic, sesame oil, and pepper powder to make the marinade.
Heat a wide pan over high heat, add the beef, and stir-fry for a while.
