Soak the red lentils for 30 minutes, wash them thoroughly by rubbing until no more foam appears, and drain in a sieve.

Slice the white part of the green onion, and cut the onion into pieces of a similar size.

Slice the carrot.

Remove the eyes from the potatoes, peel them, and thinly slice two large potatoes.

Slice the leek.

Add about 2 tbsp of olive oil to a pot.

Add the sliced onion and garlic to the pot and sauté.

Add the carrot and sauté.

Adjust the heat while sautéing the vegetables to ensure they do not burn.

Add water to the pot and bring to a boil.

Once the water boils, add the sliced potatoes; as they cook, the starch will release and help create a creamy, smooth soup texture.
