Stir-fried Dried Anchovies with Shishito Peppers

This is a crispy and delicious stir-fried anchovy recipe enhanced with tuna sauce, mirin, and shishito peppers.

What You'll Need

Small dried anchovies150g
Shishito peppers5
Garlic3 cloves
Cooking oilappropriate amount
Mirin2 tbsp
Tuna sauce1 tbsp

Instructions

Shake off any remaining powder from the small dried anchovies.

Pour 5 tablespoons of cooking oil generously into a frying pan and preheat over medium heat.

Add the small dried anchovies to the preheated pan and stir-fry as if deep-frying in oil.

Once the anchovies are golden and the fishy smell is gone, remove them with a strainer and let them cool completely to make them crispy.

Finely mince 3 cloves of garlic, and cut 5 shishito peppers into bite-sized pieces, shaking out the seeds.

Pour about 1 tablespoon of oil into the frying pan and preheat over medium-low heat.

Add the shishito peppers and minced garlic to the preheated pan and stir-fry for about 1 minute to bring out the aroma.

Add 1 tablespoon of tuna sauce and 2 tablespoons of mirin.

Bring to a boil so the seasonings mix evenly.

Add the stir-fried small dried anchovies and stir-fry until well coated with the sauce.

Turn off the heat, add 2 tablespoons of starch syrup, and toss evenly in the residual heat.

Finish by sprinkling with sesame seeds to taste.
