Clam Soft Tofu Stew

A recipe for a spicy and deep-flavored clam soft tofu stew that tastes better than restaurant versions.

What You'll Need

Soft tofu1 pack (400g)
Clams10~15
Minced pork belly50g
Green onion1 stalk
Onion1/2
Zucchini1/3
Cheongyang chili pepper2
Water300ml
Egg1
Black peppera little
Sesame oila little
Chili powder2 tbsp
Cooking wine1 tbsp
Soy sauce1 tbsp
Oyster sauce1 tbsp
Tuna fish sauce1 tbsp
Minced garlic1 tbsp

Instructions

Pour cooking oil into a pot, add green onion, and stir-fry to create scallion oil.

Once the onion aroma rises, add the minced pork belly and stir-fry.

When the pork belly is about 80% cooked, add the chili powder and stir-fry without burning it.

Add the minced garlic, cooking wine, soy sauce, oyster sauce, and tuna fish sauce to make the seasoning base.

Pour in 300ml of water, add the zucchini and onion, and boil until the vegetables are slightly cooked.

Add the clams first, and once they open, add the soft tofu.

When it bubbles, add the Cheongyang chili pepper, check the seasoning, and sprinkle with black pepper.

Finally, drizzle with a little sesame oil, crack an egg into the stew, and finish cooking.
