Soy Sauce Perilla Noodle

A summer delicacy of noodles tossed in a savory sauce made with soy sauce and perilla powder, topped with cucumber strips and toasted seaweed.

What You'll Need

Somyeon (wheat noodles)300g
Perilla powder4 tbsp
Toasted seaweed2 sheets
Soup soy sauce1 tbsp
Dark soy sauce1/2 tbsp
Perilla oil1 tbsp

Instructions

Thinly slice the cucumber into strips.

Fold the toasted seaweed in half, place it in a plastic bag, and crush it finely by hand.

Pour water into a pot and bring to a boil.

When the water is boiling vigorously, add the somyeon and boil.

When the noodles boil up, add a splash of cold water and boil for another 30 seconds.

Turn off the heat, drain the noodles, and rinse quickly in cold water to cool them down.

Place the drained noodles in a bowl and add 1 tbsp of soup soy sauce and 1/2 tbsp of dark soy sauce.

Add unpeeled perilla powder, peeled perilla powder, crushed toasted seaweed, cucumber strips, and perilla oil, then toss evenly to finish.
