Soak the frozen beef shin in water for 1 hour to remove the blood.

Blanch the soaked beef shin in boiling water once to remove any gamey odor.

Remove the blanched beef shin and wash it thoroughly.

Pour beef bone broth into a pot, add the blanched beef shin, onion, whole garlic, green onion, and cooking wine, then boil over high heat.

Once the beef bone broth starts to boil, reduce to medium-low heat, cover the pot, and boil for 1 hour 30 minutes to 2 hours.

Remove the boiled beef shin, let it cool slightly, and slice it into bite-sized pieces.

Trim the chives and cut them into appropriate sizes, and prepare the vegetables to accompany the enoki mushrooms.

Mix soy sauce, water, sugar, vinegar, mirin, mustard (or wasabi), chili pepper, and scallion to make the soy sauce.
