Zucchini Soy Sauce Bibim Guksu

Instructions

Lightly salt the zucchini and let it sit for a while.

Finely chop the green onion and cheongyang chili.

Heat cooking oil in a pan and add the chopped green onion and cheongyang chili.

Add 1/2 tbsp of minced garlic and stir-fry until the onion and chili are fragrant.

Add the salted zucchini to the pan and stir-fry together.

Add 1 tbsp of sesame oil, turn off the heat, and finish stirring.

Remove the stir-fried zucchini from the pan and set aside.

Add 4 tbsp of brewed soy sauce to the pan.

Add an equal amount of cooking wine.

Add 1 tbsp of sugar and stir to dissolve.

Add 1/2 tbsp of minced garlic, mix well, and simmer briefly to make the soy sauce seasoning.

Add 2 tbsp of oligosaccharide to complete the sauce.

Add extra sesame oil to taste.

Boil the noodles until chewy, drain, and remove excess water.

Toss the cooked noodles in the prepared soy sauce seasoning.

Place the mixed noodles on a plate and top with plenty of the stir-fried zucchini.
