Lime Cold Soba

A refreshing Japanese-style lime cold soba recipe flavored with fresh lime and kaishi sauce.

Instructions

Add 1 liter of cold water and 20g of kombu to a pot and let it steep gently.

When the kombu starts to boil, reduce the heat to low to continue steeping.

Remove the kombu and increase the heat to bring the pot to a boil.

Add 20g of bonito flakes and turn off the heat immediately.

Add cooking wine, mirin, sugar, and soy sauce, then heat until the sugar dissolves to make the kaishi sauce.

Dilute the prepared broth with the kaishi sauce to make the soba broth.

Cool the soba broth until cold.

Thinly slice the lime.

Pour plenty of water into a large pot, add the buckwheat noodles, and boil for 5 minutes.

Rinse the boiled buckwheat noodles in cold water, then soak in ice water to wash them until cold and chewy.

Pour the cold soba broth into a bowl and add the buckwheat noodles.

Top with the sliced lime to finish.
