What You'll Need

Instructions

Soak the beef short ribs in water with dissolved sugar for 30 minutes to draw out the blood, then change the water and soak for another 30 minutes for a total of 1 hour.

Pour plenty of water into a pot and bring to a boil.

Add the blood-drained beef short ribs to the boiling water and blanch for 3 minutes from the moment it starts boiling again.

Rinse the blanched beef short ribs in clean water and thoroughly remove any debris between the bones.

Place the prepared beef short ribs in a pot, add enough water to cover them, then add the green onion, onion, and whole black peppercorns and boil.

Make the seasoning sauce by mixing the jin soy sauce, cooking wine, oligosaccharide, and oyster sauce.

While the ribs are boiling, skim off any foam and impurities that rise to the surface and check the condition of the meat.
