What You'll Need

Fresh anchovies400g
Rice-washed water1L
Water300mL
Onion1/2 piece
Green onion1 stalk
Cheongyang chili pepper2 pieces

Gochujang1 tbsp
Red chili powder1 tbsp
Jin-ganjang (soy sauce)1 tbsp
Guk-ganjang (soup soy sauce)1/2 tbsp
Mirin2 tbsp
Minced garlic1 tbsp
Grated ginger1/4 tbsp
Sugar1/4 tbsp
Doenjang (soybean paste)1 tbsp
Black pepper3 pinches

Instructions

Soak the fresh anchovies in rice-washed water to remove the fishy smell.

Drain the fresh anchovies using a sieve.

Chop half an onion into thick pieces.

Slice one green onion diagonally.

Slice the Cheongyang chili pepper and red chili pepper into rounds.

In a bowl, combine gochujang, doenjang, red chili powder, jin-ganjang, guk-ganjang, mirin, sugar, minced garlic, and grated ginger to make the sauce.

Place half of the sliced onions in a pan and put the cleaned fresh anchovies on top.

Place the remaining onions, green onions, and some of the peppers on top of the anchovies.

Pour the prepared sauce over the ingredients.

Pour in 200mL of water.

Close the lid and boil over medium heat.

Open the lid and add the remaining peppers and green onions.

Sprinkle red chili powder and black pepper as a topping.

Close the lid and braise for another 3 minutes.
