Instructions

Cut the pork shank into chunks and soak in water to remove the blood.

Prepare the garlic as whole cloves and slice the ginger.

Pour 3 cups of water into a pot and add the sliced ginger, 1/4 cup of soju, and the prepared pork shank.

Blanch on high heat for 2 minutes to remove the blood and impurities from the pork.

Remove the blanched pork, rinse in cold water, and remove any debris.

Pour 6 cups of water into a braising pot and add the sliced ginger, garlic, green onion, and dried kelp.

Boil until the aromatics are infused, then add the blanched pork and boil for 20 minutes.

Remove the pork boiled with the vegetables, then add 2 tbsp of cooking wine, 3/4 cup of soy sauce, and 2 tbsp of black sugar to the broth.

Add the shishito peppers and boil for 5 minutes.
