Instructions

Purchase a pork belly cut with the skin on (a thicker piece of meat) from the butcher.

Score the meat in a crosshatch pattern, making sure the cuts are of an appropriate depth.

Prepare the seasoning by mixing salt, pepper, cayenne pepper, paprika powder, cumin, and sugar to your personal taste.

Rub the prepared seasoning deep into the meat (be careful not to get seasoning on the skin side).

Fold aluminum foil to create a tray so that only the skin is exposed while the meat portion is well-wrapped.

Lightly brush vinegar onto the surface of the skin.

Sprinkle a little salt on the surface of the skin.

Cook in an oven at about 130 degrees for about 1 hour.
