Tofu Potato Pancake

A tofu potato pancake recipe with a chewy texture, made by mashing tofu and potatoes instead of grinding them for a clean and savory taste.

What You'll Need

Tofu1 pack (290g)
Potato1 (270g after trimming)
Salt1/3 tbsp
Cheongyang chili pepper1
Potato starch6 heaping tbsp
Cooking oilappropriate amount

Instructions

Wash the pack of tofu, then place it on paper towels to remove all moisture.

Peel the large potato, slice it thinly, then julienne it finely and soak in cold water.

Soak the julienned potatoes in water for 20 seconds, rinse to remove starch, then drain completely in a sieve.

Place the drained tofu in a cotton cloth, add 5 heaping tbsp of potato starch, and squeeze to remove all moisture from the tofu.

Mash the drained tofu finely with the back of a knife and place it in a mixing bowl.

Add the julienned potatoes, finely chopped Cheongyang chili pepper, 1 tbsp of potato starch, and 1/3 tbsp of salt to the mixing bowl and mix well to complete the batter.

Take appropriate portions of the batter and shape them into round, thin patties.

Heat an appropriate amount of cooking oil in a pan, turn on the heat, and place the patties in one by one to fry.

Cook over medium heat, turning occasionally, until golden brown and crispy.

Once the bottom is golden, flip and cook the other side until golden brown to finish.
