Bibim-guksu (Spicy Mixed Noodles)

A bibim-guksu recipe that can be enjoyed cool and chewy in hot weather.

What You'll Need

Somyeon (thin wheat noodles)200g
Aged kimchi1/2 cup
Cucumber1/2
Gochujang (red chili paste)1 tbsp
Fine red chili powder2 tbsp
Jin-ganjang (dark soy sauce)2 tbsp
Brewed vinegar2 tbsp
Minced garlic1 tbsp
Sugar1 tbsp
Plum extract2 tbsp
Sesame oilGenerous amount
Sesame seedsGenerous amount

Instructions

Put 1 tbsp of Gochujang into a bowl.

Add 2 tbsp of fine red chili powder.

Add 2 tbsp of Jin-ganjang.

Add 2 tbsp of brewed vinegar.

Add 1 tbsp of minced garlic.

Add 1 tbsp of sugar.

Add 2 tbsp of plum extract.

Mix the seasoning sauce well and place it in the refrigerator to mature.

Pour plenty of water into a large pot and boil over high heat.

Julienne 1/2 cup of aged kimchi.

Julienne 1/2 of a cucumber.

Prepare one boiled egg.

When the water is boiling vigorously, add 1 tbsp of salt.

Add 1 tbsp of vinegar.

Add the Somyeon to the boiling water.

Stir for the first 30 seconds so the noodles do not clump together.

Rinse the cooked Somyeon in water and finally rinse in pre-prepared ice water.

Put the Somyeon into a large bowl.

Add an appropriate amount of the prepared seasoning sauce.

Add the julienned aged kimchi.

Add a generous amount of sesame oil and sesame seeds, then mix.
