A dish made by brining whole pork belly for 3 days to lock in the juices, then roasting it in the oven for a caramelized finish.

Instructions

Place the whole pork belly in a container and pour in lukewarm water.

Add salt in a ratio of 1.8% of the total weight of the meat.

Add a generous amount of whole black peppercorns, whole garlic, and sugar, then refrigerate the meat for 24 hours to brine.

Remove the brined pork belly and evenly coat it with a sauce made by mixing maple syrup, cherry vinegar, and black pepper.

Roast in the oven at 150 degrees for 20 minutes for the first stage.
