Stir-fried Pork Belly

A delicious stir-fried pork belly recipe using Chef Kim Dae-seok's secret method to remove gamey odors and enhance umami.

What You'll Need

Soju2 tbsp

Green onion1 stalk

Instructions

Marinate 600g of pork belly with 2 tbsp of soju for 15 minutes to remove the pork's gamey odor.

Finely slice 1/2 an onion.

Slice 1 stalk of green onion into 4-5cm lengths after splitting it in half.

Finely chop 2 Cheongyang chili peppers.

In a bowl, mix 1/3 tbsp sugar, 1 tbsp minced garlic, 1/2 tbsp doenjang, 2 tbsp soy sauce, 1 tbsp oyster sauce, 1/3 tbsp salt, and 2 tbsp starch syrup to make the sauce.

Place the pork belly in a pan, turn on the heat, and sear it thoroughly over high heat.

Once both sides are golden brown, cut the pork belly into bite-sized pieces.

Once the pork is browned, carefully wipe the grease from the pan using a paper towel.

Add the onion, green onion, and Cheongyang chili peppers to the degreased pan and stir-fry over low heat for about 2 minutes.

Add the prepared sauce, turn the heat up slightly, and stir-fry thoroughly over medium-high heat.

Lower the heat slightly, drizzle with 1 tbsp of sesame oil, and stir lightly.

Turn off the heat and sprinkle with sesame seeds to finish.
