Remove the membrane-like tissue where the bones were located on the pork belly with a knife.

Evenly apply a rub made by mixing salt, pepper, and sugar in a 1:2:0.5 ratio onto the pork belly.

Place the rubbed pork belly on the grill and cook at 120 to 130 degrees for about 4-5 hours.

Sprinkle a little apple juice on the pork belly, and when the temperature reaches 47-48 degrees, sprinkle a little more apple juice.

Put it back on the grill; if you started at 1:00, check with a thermometer after about 2 hours and 40 minutes and continue cooking until it reaches 90 degrees.
