Stir-fried Spicy Pork (Jeyuk Bokkeum)

A stir-fried spicy pork recipe featuring Chef Kim Dae-seok's 35 years of know-how. The foreleg meat is seasoned with raw sugar and mirin, then stir-fried with sauce and vegetables.

Instructions

Place 300g of pork foreleg into a pan.

Add 2 pinches of raw sugar to the pan.

Add 1 tablespoon of mirin and massage the meat to season the pork foreleg.

Cut 1/4 of an onion into appropriate sizes.

Cut 0.5 stalk of green onion diagonally.

Slice 1 Cheongyang chili pepper.

In a bowl, mix 2 tbsp red chili powder, 1 tbsp minced garlic, 1/3 tbsp doenjang, 1 tbsp dark soy sauce, 2 pinches of salt, 1 tbsp grain syrup, 1 heaping tbsp gochujang, 0.5 tbsp sesame oil, and 1 tbsp water to make the sauce.

Turn on the heat, add 1 tablespoon of cooking oil to the pan, and stir-fry the seasoned pork foreleg over medium-high heat until golden brown.

Once the pork foreleg is browned, reduce the heat and pour in the prepared sauce.

Stir-fry the sauce with the meat.

When the meat is well-coated with the sauce, add the sliced onion and green onion.

Continue to stir-fry with the onion and green onion.

Sprinkle with toasted sesame seeds to finish.
