Stir-fried Round Squash

A delicious recipe for stir-fried round squash that enhances umami with salted shrimp and uses a steaming method with a lid to preserve the texture.

What You'll Need

Round squash600~700g
Onion1/2 (120g)
Green onion1/3 stalk
Red chili pepper1
Salted shrimp (saeujeot)1 tbsp
Soup soy sauce1/2 tbsp
Cooking oil1.5 tbsp
Perilla oil1.5 tbsp
Minced garlic1 tbsp
Whole sesame seedsa suitable amount

Instructions

Cut the round squash into thick slices, then divide into thirds and slice into flat pieces.

Add 1 tbsp of salted shrimp and 1/2 tbsp of soup soy sauce to the sliced squash and mix well to marinate.

Slice 1/2 an onion into thin strips.

Finely chop 1/3 of a green onion.

Slice 1 red chili pepper for color.

In a wide frying pan, combine 1.5 tbsp of cooking oil and 1.5 tbsp of perilla oil.

Add the green onion while the oil is not yet fully preheated and stir-fry well.

When the oil starts to bubble, add 1 tbsp of minced garlic.

Once the garlic and green onion are cooked, turn the heat to high, add the marinated squash, and stir with a spatula to coat well in the oil.

Add the onion and continue to stir-fry while reducing the heat to medium.

Cover with a lid and cook over medium-low heat for 2 minutes.

After 2 minutes, open the lid, flip the squash, and mix to ensure even cooking.

Cover with the lid again and cook for another 2 to 3 minutes according to your preference.

Open the lid, add the red chili pepper and whole sesame seeds, and mix lightly to finish.
