Cut one piece of carrot and 1/4 of an onion into appropriate sizes.
Finely chop about 5-6 stalks of green onion.
In a pan, stir-fry two handfuls of dried pollack without oil until golden brown.
Add the sliced radish and carrot to the pan and stir-fry together until golden brown.
Add the onion to the pan, stir-fry until golden brown, then remove from heat.
Pour 3 bowls of water into a pot and add the stir-fried dried pollack, radish, carrot, and onion.
Add 1.5~2 tbsp of sugar, 2 tbsp of cooking wine, 3~4 tbsp of Jin-ganjang, half a large piece of dried kelp, and 1 tbsp of ginger syrup to the pot and boil.
Boil until the radish becomes translucent and the broth is well-extracted, then strain to complete the soba broth.
Grate the radish using a grater to prepare radish juice.
Finely chop the green onions.
Boil the buckwheat noodles in boiling water until chewy, about the size of a handful, then rinse in cold water and drain.
Place the boiled buckwheat noodles in a bowl and pour the cooled soba broth over them.
Top with the prepared radish juice, green onions, wasabi, and dried seaweed to finish.
