Aehobak Bokkeum (Stir-fried Zucchini)

A clean and delicious side dish recipe for stir-fried zucchini seasoned with salted shrimp.

What You'll Need

Zucchini2 pieces
Dried shrimp1 handful
Onion1/2 piece
Green onion1 piece
Cheongyang chili pepper2 pieces
Red chili pepper1 piece
Minced garlic1 tbsp
Salted shrimp (saeujeot)1 tbsp
Perilla oil2 tbsp
Roasted salta little
Sesame seeds1 tbsp
Black peppera little

Instructions

Slice the zucchini diagonally, not too thinly.

Slice 1/2 of an onion, and slice the green onion diagonally, focusing on the thinner parts.

Slice the Cheongyang chili peppers and red chili pepper diagonally without removing the seeds.

Add about 1 tbsp of oil to a pan, add 1 tbsp of minced garlic, then stir-fry the green onion and onion first.

Once the onion and green onion are stir-fried, add the zucchini and stir-fry in the pan.

When the zucchini is partially cooked, add the lightly dried shrimp.

Sprinkle a small amount of black pepper.

Add 1 tbsp of salted shrimp to season.

Add the diagonally sliced Cheongyang chili peppers and red chili pepper.

Turn off the heat and add 2 tbsp of perilla oil.

Add 1 tbsp of sesame seeds.

Taste and if it's a bit bland, finish by adding a little roasted salt since only 1 tbsp of salted shrimp was used.
