Remove the skin from the chicken thigh meat, as it is better not to eat it.

Cut the prepared chicken thigh meat into bite-sized pieces, place in a bowl, and add 2 tbsp of seasoned soy sauce.

Add 1 tsp of black pepper, 1 tsp of salt, a little sugar, and 1 tbsp of minced garlic to the chicken thigh meat and massage it in by hand to season.

Mix potato starch into the frying mix (or flour) at a 1/4 ratio and coat the chicken thigh meat evenly with the powder.

Pour olive oil into a pan to a depth of 0.5cm and fry the chicken thigh meat at a low temperature of about 100 degrees for about 10 minutes until crispy.

Remove the crispy fried chicken thigh meat from the pan and drain the oil.

Thinly slice half an onion.

Place the onion in a pan, add a little salt, and stir-fry.

Pour the sauce made with seasoned soy sauce and starch syrup into the pan, bring the starch syrup to a boil until bubbly, then add a little oyster sauce and a little water, and boil until the liquid reduces.

Place steamed rice in a bowl, top with the stir-fried onions, add the fried chicken thigh meat, and finish by drizzling mayonnaise evenly over the top.
