Cold Soba Noodles

A super simple cold soba noodle recipe that is easy and delicious to make at home.

What You'll Need

Soba noodles100g per serving
Water4.5 cups
Soy sauce1 cup
Sugar0.5 cup
Katsuobushi1 handful

Instructions

Add 4.5 cups of water, 1 cup of soy sauce, and 0.5 cup of sugar to a pot and bring to a boil.

Once the water boils, add a handful of katsuobushi and boil.

Turn off the heat and wait until the seasoning has finished boiling to complete the broth.

Strain the finished broth through a sieve to remove solids, then soak in ice water to cool down.

Add soba noodles to boiling water and cook for 5 minutes.

Rinse the cooked soba noodles in cold water several times to completely remove the starch, then drain in a sieve.

Prepare the garnish by julienning the radish, cucumber, and seaweed to appropriate sizes.

Place the drained soba noodles in a bowl and arrange the julienned radish, cucumber, seaweed, and ice on top.

Pour the chilled cold soba broth over the noodles to finish.
