Instructions

Place apple, onion, and ginger in a food processor and grind finely.

Place the finely ground apple, onion, and ginger in a cotton cloth and squeeze out the juice.

Mix lemon juice, amino soy sauce, red chili powder, minced garlic, red chili powder, sesame seed powder, whole sesame seeds, sesame oil, honey, finely chopped tomato, and the juice to make the sauce.

Thinly julienne two types of cabbage, soak in water for 5 minutes, then drain.

Julienne the bell pepper, cucumber, and perilla leaves.

Boil the buckwheat noodles in boiling water.

Rinse the boiled noodles in cold water and toss with olive oil.

Arrange the julienned vegetables nicely around the edge of a large tray and place the noodles in the center.

Serve with the prepared sauce, top with sliced avocado, and toss just before eating.
