Spicy Braised Tofu

A spicy braised tofu dish with a chewy texture and deep flavor, cooked without water by using the moisture from the tofu and vegetables.

What You'll Need

Tofu1 block (300~500g)
Onion50g
Green onion30g
Chivesa little
Red chilia little
Cooking oil2 tbsp
Perilla oil1 tbsp
Jin soy sauce3 tbsp
Tuna fish sauce1 tbsp
White sugar1 tbsp
Red chili powder1 tbsp
Minced garlic1 tbsp
Minced ginger1 tsp

Instructions

Place 1 block of tofu on paper towels to remove moisture, then slice into thick pieces.

Lightly sprinkle salt over the dried tofu to season it.

Finely chop the onion and green onion.

In a bowl, mix 3 tbsp Jin soy sauce, 1 tbsp tuna fish sauce, 1 tbsp white sugar, 1 tbsp red chili powder, 1 tbsp minced garlic, 1 tsp minced ginger, and the chopped green onion and onion to make the sauce.

Heat cooking oil in a pan, add the seasoned tofu, and pan-fry over high heat until golden brown.

Once the bottom of the tofu is golden, add 1 tbsp perilla oil, reduce heat to medium, and continue frying.

Flip the tofu once, then spoon a little of the prepared sauce over each piece and let it simmer.

Once the sauce bubbles and the onion and green onion soften and release moisture, reduce heat to low and simmer gently.

When the sauce has absorbed well and reduced, finish by sprinkling with chopped chives and red chili.
