Stir-fried Shishito Peppers

This is a recipe for stir-fried shishito peppers, a spicy and salty side dish that goes well with rice.

What You'll Need

Shishito peppers300g
Medium dried anchovies50g
Coarse salt1 tbsp
Thread chilia little
Cooking oil1 tbsp
Soup soy sauce2 tbsp
Dark soy sauce3 tbsp
Water1 cup (200ml)
Minced garlic1 tbsp
Sugar1 tbsp
Cooking wine2 tbsp
Starch syrup2 tbsp
Whole sesame seeds1/2 tbsp
Sesame powder1/2 tbsp

Instructions

Remove the stems of the shishito peppers and cut the ends to help the seasoning penetrate well.

Pour cooking oil into a deep wok and add the shishito peppers first.

Add the minced garlic and sugar first, and stir-fry until the peppers become soft.

Turn off the heat, add the soup soy sauce and dark soy sauce, then add the water and turn the heat back on.

Cover with a lid and simmer until the shishito peppers are tender.

Open the lid, add the pre-fried anchovies, cooking wine, and starch syrup, and reduce over high heat.
