Instructions

Rinse the freshwater crayfish several times under running water, remove the whiskers, and drain to prepare.

Place the freshwater crayfish in a pot and pour in enough water to cover them.

Add 1 tsp of salt and bring to a boil.

Once the water boils, add the crayfish and boil for 7 to 8 minutes to remove impurities.

Lightly rinse the boiled crayfish under running water and drain.

Slice the garlic and cut the dried chili peppers into large pieces.

Heat oil in a pan, add the garlic, and sauté over low heat until fragrant.

Once the garlic is golden, add the dried chili peppers, turn off the heat briefly, and stir-fry.

Add 5 tsp of Mala Xiang Guo sauce and stir-fry quickly.

Add the boiled freshwater crayfish and stir-fry over high heat.

Stir-fry until the moisture is gone and the sauce flavor has infused well, then turn off the heat.
