Savory and Tender Stir-fried Bracken (Gosari-namul)

A recipe for tender and savory stir-fried bracken, boiled to remove the fishy smell, seasoned with soup soy sauce and tuna sauce, and stir-fried in garlic oil.

Instructions

Boil the bracken in boiling water for 3 minutes to remove its characteristic odor.

Rinse the boiled bracken in cold water about twice, trim off any tough stems or damaged parts, and cut into bite-sized pieces.

Season the prepared bracken with 1 tbsp of soup soy sauce and 1 tbsp of tuna sauce, and massage gently to let the seasoning soak in for 5 minutes.

Add 1 tbsp of cooking oil and 1 tbsp of minced garlic to a pan and stir-fry until fragrant.

Add the seasoned bracken and stir-fry over medium heat until the moisture evaporates and the bracken becomes tender.

Add 200ml of water, adjust the heat to medium, and stir-fry until the bracken is tenderly cooked.

When the liquid has almost evaporated, add 1 tbsp of perilla oil and 2 tbsp of finely chopped chives, mix well, and turn off the heat.

Finally, lightly sprinkle with ground sesame seeds to finish.
